|The heel of the loaf, the best part|
Oh my goodness it has been a long road trying to get my household healthy again. The entire family was hit by a terrible flu and even now we are still feeling shaky on our feet. My first night to try to cook something I did a very simple and comforting roast chicken. We all nibbled a little but quite a bit was leftover.
I knew what I really needed to do was make a big pot of chicken soup. And fresh bread. In typical fashion for where we live June has been more cool and rainy than hot and sunny. I am sure chicken soup sounds more like a winter meal but trust me, on a drizzly cool day it is just the thing. So today with the leftovers (be sure you save all of them, the bones and all the pan drippings from the roast chicken) I made a batch of chicken stock. This also let me toss into the stock pot a few vegetables that were less than lovely after being neglected for the last several days but still definitely full of enough nutrition to help us all get better.
I don't have a recipe to share but I know it has been quiet around here and wanted to check in. I think in another day or two, with the help of bread and chicken soup, things will be back to normal.
